Ingredients:
1 lb. spinach
1pint white stock
1 oz. butter or margarine
1/2 pint milk
1 tsp full cornflour
pepper and salt
How to make Spinach Soup:
1.Wash the spinach in several lots of water, then cook in its own moisture and rub through a sieve.
2.Bring the stock to the boil.
3.Make the cornflour into a smooth paste with the milk, add it to the stock and againbring to the boil.
4.Then add the butter or margarine and seasoning.
5.At the last moment, add the puree of spinach and remove from the fire the moment it boils or the colour of the soup will be spoiled.
6.Serve with Puffed Rice heated in the oven.
7.A little cream greatly improves the
flavour.
