Home made sugarfree Badam Burfi Recipe Diwali Special 

Barfi, barfee, borfi or burfi is a dense milk-based sweet from the Indian subcontinent, and a type of mithai. The name is a derivative of the Hindustani word barf, which means snow.

Ingredients:

Milk 5ltrs full fat

Powdered Mil half cup

Condensed milk 400 gram

Almonds 40g ground

Mathod:

Boil the milk in a large pan on high flames, add powdered milk and let it cook. add condensed milk and almonds. when its thick paste transfer it to large bowl and gring till smooth. transfer it in a tray with baking paper lined and make cuts. leave it in fridge over night.

Roasted Semolina I cup, Cardamom 5, Sugar as per taste

Melt the butter 250g, Meanwhile add sugar and cardamom and cook for 2 minutes,

Add semolina mix well, Add boiled water carefully (it will splash) mix well, Cook till thickens, taste the sweetness and adjust if you need more.

add cup of water (keep stirring), taste the sweetness and adjust if you need more, keep stirring depending how thick you want (halwa is ready) lets move to puri dough.

puri dough:

Add 500g plain flour in large bowl, 2tbs cooking oil, Pinch of salt, Mix well, Add water bit at a time while kneading the dough, knead well till nice and smooth, Transfer in a smaller bowl, brush some oil, cover and set aside for at least 1 hour.

Puri:

make small balls and press with you fingers, roll using dough rolling pin into thin sheets, add the rolled sheets in boiled oil and cook each side for few seconds (do not let it get crispy).

Enjoy puri with halwa and channa

Halwa:

Ingredients: 

Chickpeas 

Boneless chicken 300g cut in small pieces

Water 

Salt as per taste

Black pepper 

Fresh green chillies 5 sliced

Onion 2 medium (cut in pieces)

Garlic cloves 5 crushed

Tomatoes 2 medium

Cooking Oil 2tbs


Method:

Heat cooking oil in a pot on low to nedium heat, add onion, garlic and cook for two minutes, add sliced chillies and cook for a minute, add salt, chicken, black pepper, mix well and cover with a lid, cook till chicken changes colour.

Add tomatoes cook for few minutes, add 3 cans of chickpeas in water, cover with a lid and cook till chickpeas are soft and done.

Enjoy with naan, chapati, bread, halwa puri

 Basaar mix have been in use for over 4000 years, at least since the Indus Valley Civilization.

Ingredients:

Ground Coriander 400g

Ginger Powder 300g

Cumin Powder 400g

Curry Powder Hot 1kg

Turmeric Powder 2kg

Curry Powder Mild 1kg

Kashmiri Chilli Powder 1kg

Red Chilli Powder 1kg

Paprika Powder 2kg

Methi 400g

Oil 1 1/2 ltr

 Mathod:

Mix all the spices well, Add Oil but not all at once (bit by bit) add oil mix well again add oil mix well

Mix very well using your hands

Keep in air tight container (you can use it for 2 years)

Ingredients:
Mince meat 1kg
Salt 1tsp / as per taste (same amount for meatballs)
Red chilli powder 1tbs +1 1/2 tbs
coriander powder 1tsp
Oil 2tbs
Onion 2 medium choped
tomatoes 3
fresh herbs handful
fresh chillies sliced 4
boiled eggs 5
potatoes 4 peeled and cut in pieces
Mix well and make golf size balls and set aside
 

Method:
Add oil in a large cooking pot, add chopped onions and saute till brown, add red chilli powder (1 1/2 tbs), add salt as per taste, cook for few minutes on low to medium heat, add 1 jug of water and fresh tomatoes, cover with the lid and cook on low heat for few minutes.
Layer the meat balls carefully cover with the lid and let it cook keep stirring once a while.
add sliced chillies, meanwhile peel eggs set aside
Add potatoes mix well cover the lid and let it cook till potatoed are cooked.
add peeled eggs and sprinle the herbs.
Enjoys with naans, chapatis, bread

Add 2 cups of water in a pot let it come to boil, Add Cardamom, Cloves (medium to high flame).

Add 1tsp cinnamon powder mix well, half tsp Cayenne chilli powder mix well, Add vanilla sugar as per taste mix well once it comes to boil add I cup of milk lower the heat.

once it comes to boil again add one more cup of water at this stage, add coffee according to your taste.

on 2nd boil (at this stage you will need to mix well).

Your coffee is ready to be transferred in the cup add 1tsp cocoa powder and enjoy.

Sharbat (Persian: شربت; also transliterated as shorbot, şerbet or sherbet pronounced [ʃərbət̪]) is an Iranian drink also popular in Turkey, South Asia, Caucasus and the Balkans. It is prepared from fruits or flower petals. It is a sweet cordial, and usually served chilled.

 Sharbat (syrup) is made by preparing the decoction or infusion of the ingredient drugs or by taking the juice of the fruit, which is then mixed with sugar and boiled to a required consistency (2). The invention of Sharbat is attributed to Pythagoras (an ancient Greek philosopher and mathematician)

Ingredients:

cherries

plums

dark grapes

blue berries

sugar

water

cinnamon stick

cloves

lemon

star anise

 

Methid: 

 In a medium-size pan add the fruits, water, and the spices

Bring it to a boil and continue to cook on low medium heat for about 30 minutes

With a skimmer drain and take out the fruit into a colander.

Add the sugar into the fruit water and continue to cook until sugar dissolve for about 5 more minutes on low heat.

 The remaining pulp of the fruits will still have some juice left. So drain that valuable juice as much as you can, helping by pressing with a back of a wooden spoon and add the juice back to the pan.

Turn off the heat and pour the sherbet into a pitcher and let it completely cool down.

Add the sherbet to the refrigerator and chill completely. It will be concentrated so when serving you can add more cold water and ice cubes. Usually, it gets about 1+1/2 liter more water but you can just taste and adjust the amount as you wish
